Toby’s First Irish Birthday


Today was Toby’s first birthday here in Ireland. It was quite nice and relaxed! We slept in late, kind of lounged around, and then went to the grocery store and bought stuff to make a nice roast. It was SOOOOO good!!!

First, when we got home we had our left-over chicken tikka masala…

Then later that night we made our sirloin roast, and cooked it in the oven with onions, potatoes, carrots, parsnip, and rosemary.

Toby's Birthday Dinner

We the sirloin roast (1.8 kilos/ 4.5 pounds) at 200 degrees Celsius (about 375-400 Fahrenheit) for an hour and 20 minutes. We placed a thermometer in the middle and cooked it until the internal temperature was 140 degrees Fahrenheit (medium rare). Before we put the roast in, all we did was coat it with salt and pepper. The veggies were a premixed pack we bought at a local grocery store (superquinn) that came with rosemary olive oil. (note, if you’re in Ireland and want to buy these veggies, it’s called “Donnellys Root Veg Roasting Tray”).

After dinner, we attempted to go to the Woolshed to watch the NFL playoff games, because they were advertising that they were playing the game. Unfortunately, they were INSANELY packed. So, we went to a place called The Living Room instead. They weren’t playing the audio, but at least they were playing the game on one of their sports screens. We then had Toby’s birthday deserts…

    Looks like a good birthday! The food looks amazing! You are really quite the amazing cook. Unfotunately I often have to be careful to read your blog AFTER I’ve eaten. Otherwise I always feel the need to eat lol!
